Oatmeal Fruit Casserole

Ingredients
2 cups  Rolled Oatmeal
1/3 cup packed light brown sugar
1 teaspoon baking powder
1 tablespoon grated orange zest
1 teaspoon Cinnamon, 1/4 tsp Nutmeg
1/2 teaspoon salt
1/2 cup walnuts, chopped (nut allergy...skip the nuts)
1 cup sliced strawberries
1/3 cup  semi-sweet chocolate chips
2 cups milk, your flavor milk (soy, chocolate, almond, etc)
1 large egg
3 tablespoons butter, melted
2 teaspoons vanilla extract
6 drops of wild orange essential oil, optional add 3 drops cinnamon essential oil Show Me The OIL!
1 ripe banana, peeled, 1/2-inch slices
Instructions:
Heat oven to 375 degrees F  Generously spray the inside of a 10 x 10 or 13 x 9 with cooking spray and place on a baking sheet.
In a large bowl, mix together the oats, sugar, baking powder, orange zest, cinnamon and nutmeg, salt, half the walnuts, half the strawberries and half the chocolate.
In another large bowl, whisk together the milk, egg, wild orange and cinnamon essential oils, butter and vanilla extract.

Assembling:
Add dry ingredients into cooking pan. Pour liquid ingredients over the oats and fruit. Gently shake baking dish. Scatter banana slices. And arrange the remaining half of strawberries, walnuts and chocolate on top of oat mixture.
Bake in 375 oven for 35-45 minutes. Varies upon your desired consistency.
Serve warm for breakfast or after dinner dessert. Serve with 1/4 cup of organic vanilla ice cream or NOT!
Can be prepared the night before: Serve cold in a bowl with warm milk as a cereal or warm on stove top.
