TWO EASY RECIPES IN ONE: SWEET POTATO SNACK OR SOUP
Quick & Easy Sweet Potato Soup- THE TWO IN ONE RECIPE

3 lbs Sweet Potatoes, chopped
Place on baking sheet: Coat chopped sweet potatoes with Coconut Oil, Cinnamon and Salt. (Season to your desire)
Bake in oven for 45 minutes on 425. Toss mixture at least one time during baking process.
RECIPE ONE ABOVE -makes a perfect snack, side vegetable, or mashed sweet potatoes
RECIPE TWO:
5 cups broth, vegetable
3 cups almond milk- (any milk of your liking)
Allow sweet potatoes to cool, place a scoop or two of cooked sweet potatoes in food processor or blender with cup of broth. Blend until smooth. Continue this process until all the sweet potatoes are a smooth texture. (no chunks)
In big pot with lid, pour smooth textured sweet potatoes into large stockpot:
ADD: 1/2 tsp Cinnamon, 1/4 tsp Nutmeg & 1/4 tsp Allspice with approximately 3 cups milk. Stir in spices and add milk 1/2 cup at a time. Continue adding milk and stirring until you are happy with the thickness.
Make sure stove top is on medium heat while adding spices and milk. After spices are added and consistency is at your liking, put lid onto pot, lower heat and allow to heat.
One can add 4 drops of cinnamon essential oils just before serving. Enhance flavor and increase optimal health. (Essential oils are 50-70% more potent than the herb itself)
Serve hot and enjoy!
